Quiche in love

I love eating quiche, but I also love making it as an easy breakfast, lunch, or dinner that everyone will eat and is easy to sneak in vegetables like spinach or broccoli. Sometimes, I like to dress it up as minus or even mini hearts- the individual serving size can be fun and cuts down baking time. I was inspired by this easy online recipe that didn’t require making a crust and went from there. I typically use whatever cheese, meats, and veggies I have on-hand, but here’s an example…

2 cups milk

2 eggs

2 egg whites

3/4 cup biscuit baking mix

1/8 cup butter, softened

1/8 cup Greek yogurt

1/2 cup grated Parmesan cheese

1/2 cup crumbled feta

1 (10 ounce) package chopped frozen broccoli, thawed and drained

1 cup diced, cooked turkey bacon

8 ounces shredded Colby jack cheese
